Flavorful Indian cucumber dosa with ginger and green chile, perfect for breakfast or snacking.
Ingredients:
  • 1 cup grated cucumber
  • 1 cup semolina flour
  • 0.5 cup grated coconut
  • 4 tablespoons rice flour
  • 1 teaspoon finely chopped green chile pepper
  • 0.5 teaspoon finely chopped ginger
  • salt to taste
  • 1 cup water, or more if needed
  • 2 tablespoons oil, or as needed
Instructions:
  • In a bowl, mix together cucumber, semolina flour, coconut, rice flour, green chile, ginger, and salt until well combined. Stir in water and mix again. Allow the batter to rest for 30 to 45 minutes.
  • Preheat a pan over medium heat, brush with oil. Pour batter into the pan, spread gently, cook until golden brown on both sides, about 1 minute each. Repeat with the rest of the batter.
