Whip up a refreshing raita with yogurt, cucumber, and mint for the perfect Indian meal accompaniment.
Ingredients:
  • 2 cups Greek yogurt
  • 2 hot house cucumber - peeled, seeded and thinly sliced
  • 3 tablespoons lemon juice
  • 2 tablespoons chopped fresh mint
  • 0.5 teaspoon white sugar
  • 0.25 teaspoon kosher salt
Instructions:
  • Combine yogurt, cucumber, lemon juice, mint, sugar, and salt in a bowl. Chill in the fridge for a minimum of 3 hours, ideally overnight.
