Creamy cucumber mint raita: A refreshing Indian yogurt condiment with cumin.
Ingredients:
  • One large (or two medium) cucumbers, peeled, cut in half lengthwise and seeded, then grated
  • 2 cups (475 ml) plain whole milk yogurt
  • 10 large mint leaves, thinly sliced* (can sub cilantro)
  • 1/2 teaspoon ground cumin**
  • Pinch cayenne
  • Pinch paprika
  • Salt and pepper
Instructions:
  • Drain grated cucumber using a sieve or wrap it in a tea towel, then press to remove excess moisture.
  • Mix spices and fresh mint into creamy yogurt in a bowl. Fold in grated cucumber. Refrigerate until serving time.
