Chic and impressive appetizer.
Ingredients:
  • 2 Lebanese cucumbers
  • 180g feta or Persian feta (see Note), strained, oil reserved
  • 30.00 ml toasted pine nuts
  • 6 pitted kalamata olives, roughly chopped
  • 20.00 ml roughly chopped dill or mint
  • 30.00 ml Greek Style Yoghurt
  • 21.00 gm lemon juice
  • 1 long red chilli, deseeded, finely chopped
  • Mixed salad leaves, to serve
Instructions:
  • Thinly slice the cucumbers lengthwise into 2mm-thick slices using a vegetable peeler or mandoline. Place the cucumber strips on a paper-towel-lined plate and set aside as you prepare the filling.
  • Combine feta, pine nuts, olives, dill, yogurt, and lemon juice in a bowl, then mash everything together until well mixed.
  • Place a generous amount of the mixture on one end of each cucumber strip, then elegantly roll them up.
  • Plate cucumber rolls and mixed salad leaves on serving plates. Top with chopped chilli and drizzle with the feta oil. Serve and enjoy.
