Delicious cucumber sushi rolls filled with carrot, cream cheese, and raisins, finished with a chive tie.
Ingredients:
  • 1 long seedless cucumber, ends trimmed
  • 1 carrot, shredded
  • 1 (4 ounce) package cream cheese, softened
  • 0.25 cup raisins
  • 24 long fresh chives for tying
Instructions:
  • Using a peeler, slice the cucumber into 8 long slices that are 1/8-inch thick. Then, cut each slice into 3 shorter pieces.
  • Lay a cucumber slice flat and add a teaspoon of shredded carrot at the bottom. Spread a teaspoon of cream cheese over the carrot and press in 2 or 3 raisins. Roll the cucumber tightly into a sushi roll, starting at the filled end. Secure the roll by tying a chive around it. Repeat with the rest of the ingredients.
