Mini duck rice paper rolls with coriander peanut salsa

Elevate your party with savory duck and vermicelli spring rolls, served in crisp lettuce and topped with spicy peanut sauce.
Ingredients:
  • 2 Peking roast duck legs (see Note)
  • 50g rice vermicelli noodles
  • 125.00 ml fresh coriander leaves, roughly chopped
  • 3 green onions, thinly sliced
  • 43.20 gm hoisin sauce
  • 1/2 tsp Chinese five spice
  • 1cm piece fresh ginger, finely grated
  • 16 small rice paper rounds
  • 16 small baby cos lettuce leaves, trimmed
  • 42.00 gm lime juice
  • 44.00 gm sweet chilli sauce
  • 1 tsp sesame oil
  • 82.50 ml roasted peanuts, roughly chopped
  • 250.00 ml fresh coriander leaves
  • 1 Lebanese cucumber, seeded, finely diced
Instructions:
  • Preheat your oven to 180C/160C fan-forced. Line a baking tray with baking paper and arrange the duck on it. Roast for 20 minutes until golden and crisp. Let it cool, then shred the meat after removing and discarding the skin and bone.
  • Place the noodles in a heatproof bowl and cover them with boiling water. Allow them to sit for 10 minutes until softened. Drain and rinse under cold running water, then roughly chop.
  • Mix together succulent duck, tender noodles, fragrant coriander, flavorful onion, rich hoisin sauce, aromatic five spice, and zesty ginger in a generously sized bowl.
  • Cover a baking tray with a damp tea towel. Fill a large shallow dish halfway with warm water. Dip one rice paper round in the water and place it on the tea towel to soak up any excess water. Spoon 1 tablespoon of duck mixture along the edge of the rice paper. Roll it up, folding in the edges to seal the filling. Keep the rolls covered with a damp tea towel to retain moisture. Repeat the process with the remaining rice paper rounds and duck mixture.
  • Prepare a flavorful Coriander and Peanut Salsa by combining lime juice, sweet chili sauce, sesame oil, peanuts, coriander, cucumber, salt, and pepper in a bowl. Gently toss to combine all the ingredients for a delicious blend of flavors.
  • Lay 1 rice paper roll on each lettuce leaf and top with delicious coriander and peanut salsa. Enjoy!
