Cucumber salad with garlic dressing recipe

Serve this zesty summer salad alongside succulent and flavorful sweet and sticky meats for a memorable and satisfying meal.
Ingredients:
  • 9.20 gm peanut oil
  • 2 tsp sesame oil
  • 5cm-piece ginger, peeled, cut into matchsticks
  • 1 garlic clove, finely chopped
  • 42.00 gm salt-reduced soy sauce
  • 21.00 gm lemon juice
  • 5.00 gm caster sugar
  • 3 Lebanese cucumbers, peeled into ribbons
  • 2 spring onions, thinly sliced diagonally
  • 250.00 ml coriander leaves
  • 1 long red chilli, thinly sliced (optional)
  • 12.00 gm sesame seeds, toasted
Instructions:
  • In a small saucepan over low heat, warm the peanut oil and sesame oil. Add ginger and garlic, cook until fragrant for about 30 seconds, then remove from heat. Stir in soy sauce, lemon juice, and sugar until sugar dissolves. Let it cool.
  • On a serving platter, artfully arrange the cucumber, spring onion, coriander, and optional chilli. Drizzle with the dressing and sprinkle with sesame seeds.
