Whip up a stunning radish salad with cucumber, red onion, and a tangy garlic dressing - perfect for summer!
Ingredients:
  • 2 cups sliced radishes
  • 1 cup sliced red onion
  • 1 cup seeded and sliced cucumber
  • 0.5 cup extra virgin olive oil
  • 2 tablespoons white wine vinegar
  • 1 teaspoon chopped fresh dill
  • 1 clove garlic, minced
  • 0.5 teaspoon white sugar
Instructions:
  • Season radishes with a pinch of salt and allow them to rest for approximately 10 minutes. Discard any liquid, then place radishes in a spacious bowl along with red onion and cucumber slices.
  • In a small bowl, combine olive oil, vinegar, dill, garlic, and sugar, whisk until well blended. Pour over vegetables, toss to coat. Chill in the refrigerator for at least 1 hour before serving.
