Delightfully fresh and easy cucumber salad is the perfect summer side. Thinly sliced cucumbers marinate in a light dressing of vinegar, sugar, salt, and pepper for a zingy kick. Versatile dish pairs well with any grilled entree or even comforting casseroles year-round.
Ingredients:
  • 2 medium cucumbers, thinly sliced
  • 1/3 cup cider or white vinegar
  • 1/3 cup water
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • Chopped fresh dill weed or parsley, if desired
Instructions:
  • Transfer the cucumbers into a petite glass or plastic bowl.
  • In a sealed container, shake all ingredients except dill weed. Pour the mixture over the cucumbers. Chill in the fridge for at least 3 hours to allow flavors to meld.
  • Pat dry cucumbers to remove excess moisture. Generously sprinkle with fragrant dill weed and refrigerate covered for optimal flavor.
