Refreshing springtime chilled soup for elegant dinner parties.
Ingredients:
  • 3 (about 500g) Lebanese cucumbers, chopped, plus extra to serve
  • 235.00 gm sour cream, plus extra, to serve
  • 40.00 ml fresh dill, chopped
  • 40.00 ml sherry vinegar
  • Black pepper, cracked, to taste
  • Extra virgin olive oil, to serve
Instructions:
  • In a blender, combine cucumbers, buttermilk, sour cream, dill, and sherry vinegar. Season to taste. Blend until smooth. Chill in the fridge for 1 hour to thicken.
  • Spoon into bowls and garnish with a dollop of sour cream, cucumber, cracked pepper, and a drizzle of extra virgin olive oil.
