Creamy cucumber soup with chicken broth, scallions, farina, tarragon, and sour cream. Enjoy hot or cold.
Ingredients:
  • 2 cucumbers
  • 2 tablespoons thinly sliced green onion
  • 2 tablespoons margarine
  • 1 tablespoon red wine vinegar
  • 4 cups chicken broth
  • 1 tablespoon farina
  • 0.125 tablespoon dried tarragon
  • 3 tablespoons chopped fresh parsley
Instructions:
  • Prepare 2 cucumbers by peeling, seeding, and chopping.
  • Saute the scallions in the margarine until tender. Stir in the chopped cucumbers and wine vinegar, then add the broth and farina. Season with salt and tarragon. Simmer the soup for 20 minutes until the cucumbers are soft.
  • Blend the soup until smooth.
  • Transfer the puree to a bowl and gently whisk in the sour cream. Adjust seasoning to taste. Divide the soup into bowls and top with cucumber slices and chopped parsley for a fresh and vibrant finish.
