Cumquat preserve with star anise and chilli

Spicy citrus cumquat conserve enhances roasted duck beautifully.
Ingredients:
  • 1kg cumquats (see note), halved lengthways, seeded
  • 100g (1/2 cup) caster sugar
  • 125ml (1/2 cup) water
  • 4 whole star anise
  • 2 cinnamon sticks
  • 2 small fresh red chillies
Instructions:
  • In a large saucepan over low heat, gently stir together cumquat, sugar, and water until the sugar dissolves, about 3 minutes. Add star anise, cinnamon sticks, and chillies, then increase the heat to medium-high. Cover, bring to a boil, then lower the heat to medium and simmer until cumquat is soft, about 10 minutes.
  • Divide the hot preserve between two 500ml (2-cup) sterilized jars using a large metal spoon. Seal, invert for 2 minutes, then turn upright and let cool. Label, date, and store in a cool, dark spot for up to 6 months. Refrigerate after opening.
