Curry-infused quinoa: versatile and tasty side dish.
Ingredients:
  • 2 tablespoons olive oil, or as needed
  • 1 small onion, diced
  • 1 cup quinoa
  • 2 cups chicken broth
  • 1 tablespoon curry powder, or to taste
  • 1 tablespoon ancho chile powder
  • salt and pepper to taste
Instructions:
  • In a large skillet over medium heat, sauté onion and garlic for 2 minutes in oil. Add quinoa and toast for about 5 minutes until lightly golden.
  • Pour the flavorful broth into the pan and bring to a bubbling boil. Lower the heat and sprinkle in the aromatic curry and chile powders. Cover and gently simmer until the ingredients are tender, approximately 25 minutes. Season with a pinch of salt and pepper to perfectly balance the flavors.
