Curried rice and mango stuffing recipe

Elevate your Christmas meal with a tasty curried rice and mango stuffing.
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 1 small brown onion, finely chopped
  • 1 small red capsicum, finely diced
  • 7.50 gm curry powder
  • 200.00 gm basmati rice
  • 382.50 gm chicken style liquid stock
  • 1 large mango, finely diced
  • 40.00 ml natural sliced almonds, toasted
  • 27.20 gm sultanas
  • 2 tsp finely grated lemon rind
  • 40.00 ml chopped fresh flat-leaf parsley
Instructions:
  • In a large heavy-based saucepan over medium-high heat, heat oil. Add onion and capsicum, cook and stir for 5 minutes until softened. Add garlic and curry powder, cook for 1 minute until fragrant. Mix in rice, then pour in stock. Cover, bring to a boil, then simmer on low for 12 minutes until tender. Remove from heat, let stand covered for 5 minutes. Fluff rice with a fork, transfer to a bowl, and cool for 30 minutes.
  • Combine fresh mango chunks, crunchy almonds, sweet sultanas, fragrant rind, fresh parsley, and a whisked egg in a bowl. Season with your favorite spices. Mix everything together until well combined.
