Hearty leftover turkey curry soup with apples, rice, and aromatic spices - a comforting one-pot wonder that converts curry skeptics.
Ingredients:
  • 2 tablespoons butter
  • 2 cups chopped onion
  • 1 cup chopped celery
  • 1 cup chopped carrot
  • 4 teaspoons yellow curry powder
  • 4 cups of chicken or turkey stock
  • 1/4 cup raw white rice (we use basmati)
  • 2 green apples, peeled, cored, and diced
  • 1 teaspoon kosher salt (may add more to taste)
  • 2 bay leaves
  • 1/4 teaspoon black pepper
  • 2 cups chopped cooked turkey meat
  • 1/4 cup heavy cream
  • Sour cream or plain yogurt for garnish
  • Chopped chives for garnish
Instructions:
  • In a large, heavy pot over medium-high heat, melt butter. Add onions, celery, and carrots. Reduce heat and cook until softened, around 8 to 10 minutes. Stir in curry powder and cook for an additional minute or two.
  • Combine bay leaves, stock, and rice in the pot, bring to a boil, then reduce heat and simmer for 5 minutes.
  • Simmer the chopped apples, salt, and pepper for an additional 10 minutes.
  • Add the turkey to the pot and bring it back to a simmer. Then, stir in the cream. Taste and season with more salt and pepper, if desired.
