Ingredients:
  • 600g turkey mince
  • 125.00 ml chopped fresh coriander
  • 56.00 gm mild curry paste
  • Olive oil spray
  • 6 pita breads
  • 80g baby spinach leaves
  • 1 small red onion, halved, thinly sliced
  • 200g (3/4 cup) Greek Style Yoghurt
Instructions:
  • Mix together the mince, fresh coriander, curry paste, and minced garlic in a large bowl. Season with a sprinkle of salt and pepper. Divide the mixture into 8 portions and form them into rissoles.
  • Preheat a large barbecue grill or chargrill to medium-high and lightly spray with oil. Cook the rissoles for 4 minutes on each side until golden and cooked through. Transfer to a plate, cover with foil to keep warm. Quickly grill the bread for 1-2 minutes on each side until lightly charred. Cut into wedges.
  • Mix the spinach and onion together in a bowl.
  • Scoop the rissoles, bread, and spinach mixture into individual serving dishes and generously drizzle with creamy yogurt on top.
