Make quick and delicious spicy vegetarian pilaf.
Ingredients:
  • 18.40 gm vegetable oil
  • 1 brown onion, thinly sliced
  • 175.00 gm balti curry paste
  • 300.00 gm Basmati rice
  • 400ml can coconut milk
  • 420g packet stir-fry vegetable mix
  • 1 bunch fresh coriander, leaves picked
Instructions:
  • 1. In a large saucepan over medium-high heat, sauté onions in oil until lightly browned, about 5 minutes, stirring occasionally. 2. Stir in curry paste and continue to cook until fragrant, about 1 minute.
  • Coat the rice by stirring it, then pour in coconut milk and 1 cup of cold water. Bring it to a boil, cover, and simmer on low for 15 minutes until all liquid is absorbed. Stir in the vegetable mix and let it steam, covered, for 5 minutes before serving.
  • Add half of the coriander into the mixture, then spoon into serving bowls, and finally garnish with the rest of the coriander before serving.
