Curry chicken pasta salad: perfect for any meal, served over a bed of lettuce with breadsticks on the side.
Ingredients:
  • 5 chicken breast halves
  • 1 (8 ounce) package pasta shells
  • 1 cup reduced-calorie mayonnaise
  • 1 cup fat-free plain yogurt
  • 1 teaspoon curry powder, or more to taste
  • 0.5 (10 ounce) package frozen peas, thawed
  • 4 radishes, sliced
  • 2 green onions, sliced
Instructions:
  • 1. Bring a large pot of salted water to a boil, then simmer chicken breasts until cooked through, about 12-15 minutes. Ensure the internal temperature reaches 165°F (74°C). Chill, dice, and refrigerate until cold.
  • 1. Boil a pot of salted water. 2. Cook shell pasta in the boiling water for 8 minutes until al dente, stirring occasionally. 3. Drain the pasta and rinse under cold water until cool.
  • Combine mayonnaise, yogurt, and curry powder in a large bowl. Mix in cold chicken, pasta, peas, radish slices, and green onion slices until well blended.
  • Chill the covered bowl in the refrigerator for at least 3 hours before serving.
