Japanese-inspired curry udon soup: thick vegetable broth with udon noodles, soy sauce, and curry powder for a flavorful and easy meal.
Ingredients:
  • 3 carrots, cut into bite-size pieces
  • 1 small onion, cut into bite-size pieces
  • 3 tablespoons water
  • 0.25 cup vegetable oil
  • 0.5 cup all-purpose flour
  • 2 tablespoons all-purpose flour
  • 2 tablespoons red curry powder
  • 5 cups hot vegetable stock
  • 0.25 cup soy sauce
  • 2 teaspoons maple syrup
  • 8 ounces udon noodles, or more to taste
Instructions:
  • In a microwave-safe bowl, combine carrots and onion with water. Cover and microwave until tender, for about 4 minutes on high power.
  • In a large pot over medium heat, warm oil. Add 1/2 cup plus 2 tablespoons flour, whisk to create a paste, and cook for 1 to 2 minutes. Mix in curry powder. Slowly whisk in hot vegetable stock until smooth, about 3 minutes. Add steamed carrots, onion, soy sauce, and maple syrup to the curry broth.
  • 1. Boil a pot of water until it's roaring. Cook udon in the bubbling water, stirring now and then, until the noodles are just right - tender with a slight chew, for about 10 to 12 minutes. Drain the noodles and mix them into the curry broth.
