Elevate your Christmas feast with Curtis Stone's savory apple jelly gems, a perfect accompaniment to roast pork. The gems transform into a delectable apple sauce, sure to impress all your guests.
Ingredients:
  • 375ml apple juice
  • 18.00 gm gelatine powder
  • 20.00 ml Calvados or brandy (optional)
Instructions:
  • In a saucepan, pour 1/2 cup (125ml) apple juice or cider. Sprinkle gelatine over the liquid and let it sit for 3 minutes until softened.
  • Simmer gelatine mixture on medium-high heat until dissolved, then stir in the rest of the apple juice or cider, Calvados or brandy (if using), and a pinch of salt.
  • Pour the mixture into a 12cm x 22cm loaf pan, skimming off any foam that appears on the surface. Chill in the refrigerator for 2 hours or until firm.
  • With a fork, create square-shaped pieces by scraping the top 1.5cm surface of the jelly lengthways and crossways. Spoon the gems over the pork, letting the heat melt the jelly.
