Strawberry and vanilla flavors harmonize in a flaky, golden pastry.
Ingredients:
  • 2 sheets (25 x 25cm) frozen ready-rolled puff pastry, just thawed
  • 400g (1 cup) Vanilla Custard
  • 115g (1/3 cup) strawberry jam
  • Icing sugar mixture, to dust
Instructions:
  • 1. Preheat oven to 220°C and line a baking tray with non-stick baking paper. 2. Lay 1 sheet of pastry on the prepared tray. 3. Cover with another piece of baking paper and place another tray on top to prevent the pastry from rising too much. 4. Bake for 15-20 minutes until the pastry is crisp and golden. 5. Cool completely on a wire rack before repeating with the remaining pastry.
  • Cut each pastry sheet in half using a large serrated knife, then cut each piece into 4 rectangles. Spread half of the custard over 4 pastry rectangles, then top with another 4 pastry rectangles. Spread jam over these and top with 4 more pastry rectangles. Spread the rest of the custard over these and top with the remaining pastry rectangles.
  • Sprinkle with a delicate layer of icing sugar before serving.
