Creamy skillet chicken with dairy-free almond milk, tender chicken thighs, and savory mushrooms.
Ingredients:
  • 4 slices sugar-free bacon
  • 2 pounds skinless, boneless chicken thighs
  • salt and freshly ground black pepper to taste
  • 1 teaspoon Italian seasoning blend
  • 1 (8 ounce) package fresh mushrooms, cleaned and sliced
  • 1 tablespoon minced garlic
  • 1 cup unsweetened plain almond milk
  • 2 teaspoons cornstarch
  • 1 tablespoon water
  • 1 tablespoon snipped fresh parsley
Instructions:
  • In a large oven-proof skillet, cook the bacon over medium-high heat, turning occasionally, until crispy and evenly browned, about 10 minutes. Remove bacon and set aside. Drain on paper towels. Keep 2 tablespoons of the rendered fat in the skillet.
  • Preheat the oven to 375°F (190°C) for the perfect temperature to bake your recipe.
  • Make sure to pat the chicken thighs dry with a paper towel, then season both sides with a light sprinkle of salt and pepper to your liking.
  • Place the seasoned chicken thighs in a single layer in the skillet and generously sprinkle them with Italian seasoning blend. Sear over medium-high heat until golden brown on each side, approximately 3 minutes per side. Transfer to a plate to keep warm.
  • Cook sliced mushrooms in the skillet until soft, then add garlic and cook until fragrant, about 1 minute.
  • Pour in the creamy almond milk, and taste the sauce for seasoning. Gently place the chicken thighs back in the skillet, ensuring they are nestled in and coated with the luscious sauce.
  • Bake in the preheated oven, uncovered, until the chicken reaches an internal temperature of 165°F (74°C), approximately 20 minutes.
  • In a small bowl, swiftly whisk together cornstarch and cold water until smooth. Pour into the hot sauce, stirring continuously to slightly thicken.
  • Transfer the chicken along with the savory sauce to a beautiful serving dish, then generously crumble the crispy reserved bacon on top before finishing it off with a sprinkle of fresh parsley.
