Spiced lentils simmered in tangy tomato sauce, enriched with cream for a decadent side dish.
Ingredients:
  • 1 cup lentils
  • 0.25 cup dry kidney beans
  • water to cover
  • 5 cups water
  • 2 tablespoons vegetable oil
  • 1 tablespoon cumin seeds
  • 4 cardamom pods
  • 1 cinnamon stick, broken
  • 4 bay leaves
  • 6 whole cloves
  • 1.5 tablespoons ginger paste
  • 1.5 tablespoons garlic paste
  • 1 pinch cayenne pepper, or more to taste
  • 1 cup canned tomato puree, or more to taste
  • 1 tablespoon chili powder
  • 2 tablespoons ground coriander
  • 0.25 cup butter
  • 2 tablespoons dried fenugreek leaves
  • 0.5 cup cream
Instructions:
  • In a large bowl, generously cover lentils and kidney beans with water. Soak for a minimum of 2 hours or overnight. Drain before using.
  • Simmer lentils, kidney beans, 5 cups water, and salt in a pot over medium heat until tender, stirring occasionally, for about 1 hour. Then, set aside and reserve in the pot with cooking liquid.
  • Step: Warm vegetable oil in a saucepan over medium-high heat until shimmering. Sizzle cumin seeds in the oil until they start popping, around 1 to 2 minutes. Introduce cardamom pods, cinnamon stick, bay leaves, and cloves and sauté until the bay leaves are tinged with brown, about 1 minute. Lower the heat to medium-low and incorporate ginger paste, garlic paste, turmeric, and cayenne pepper, stirring well to coat evenly.
  • Incorporate tomato puree into the spice blend and simmer over medium heat until slightly thickened, approximately 5 minutes. Then, mix in chili powder, coriander, and butter, stirring until the butter is fully melted.
  • Combine lentils, kidney beans, and their cooking water with the tomato mixture and bring to a gentle boil, then lower the heat. Sprinkle in the fenugreek, cover, and gently simmer for about 45 minutes, stirring occasionally. Finally, add cream and heat through for 2 to 4 minutes.
