Satisfying vegetarian curry with bold flavors of ginger, chiles, tomatoes, and spices. Enjoy over rice or in soup bowls for a comforting meal.
Ingredients:
  • 2.5 cups moong dal (split husked mung beans)
  • 2.5 cups water
  • 1.5 teaspoons salt
  • 0.5 teaspoon grated fresh ginger root
  • 1 teaspoon diced jalapeno chile pepper
  • 0.5 cup diced tomatoes
  • 3 teaspoons lemon juice
  • 0.5 teaspoon ground turmeric
  • 2 teaspoons vegetable oil
  • 1 teaspoon cumin seed
  • 0.5 dried red chile pepper
  • 1 pinch Asafoetida
  • 2 cloves garlic, finely chopped
  • 0.25 cup chopped fresh cilantro
Instructions:
  • Thoroughly wash the dal to ensure it's clean, then transfer to a saucepan along with 2 1/2 cups of water. Let it soak for 30 minutes.
  • In a pot, combine dal, water, and salt, bringing it to a lively boil. Simmer over medium-low heat until beans are extra tender and the mixture thickens, about 15 to 20 minutes. Adjust consistency by adding more water as needed. Fold in ginger, jalapeno, tomato, lemon juice, and turmeric, then serve.
  • In a small saucepan, warm oil and add cumin seed and red chile pepper until fragrant. Next, add Asafoetida powder and garlic. Combine this mixture with split peas and cilantro, ensuring everything is thoroughly mixed.
