Decadent chocolate cookies filled with creamy vanilla frosting.
Ingredients:
  • 0.5 cup unsweetened cocoa powder
  • 0.5 cup boiling water
  • 0.5 cup shortening
  • 1.5 cups white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2.6666667461395 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.5 cup buttermilk
  • 2 tablespoons all-purpose flour
  • 1 pinch salt
  • 1 cup milk
  • 0.75 cup shortening
  • 1.5 cups confectioners' sugar
Instructions:
  • Preheat oven to 350°F (175°C) and grease cookie sheets. Combine cocoa and boiling water in a small bowl, then let cool for 5 minutes.
  • - In a medium bowl, cream together 1/2 cup shortening and white sugar until smooth. - Add the eggs one at a time, followed by the vanilla extract and cocoa mixture. - In a separate bowl, mix 2 2/3 cups flour with baking powder, baking soda, and salt. - Gradually combine the dry ingredients into the sugar mixture with buttermilk, alternating between the two. - Drop rounded tablespoons of dough 2 inches apart on prepared cookie sheets.
  • Preheat oven, then bake until firm, approximately 10 to 12 minutes. For the filling, combine remaining flour and a pinch of salt in a saucepan. Slowly whisk in milk, cook over medium heat until thickened, about 5 to 7 minutes. Remove from heat, cover, and chill. Cream shortening and confectioners' sugar in a bowl until fluffy. Gradually mix in vanilla and chilled milk mixture until fluffy. Spread filling between cookies to make sandwiches.
