Decadent homemade cookie sandwiches filled with a fluffy marshmallow blend. Whip up cocoa-infused batter, bake, and fill with marshmallow goodness.
Ingredients:
  • 0.5 cup butter, softened
  • 1 cup evaporated milk
  • 0.5 cup unsweetened cocoa powder
  • 1.5 teaspoons baking soda
  • 0.5 teaspoon baking powder
  • 1 cup confectioners' sugar
  • 1 cup marshmallow creme
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and gently grease a cookie sheet.
  • Cream together butter, sugar, egg, evaporated milk, and vanilla in a large mixing bowl. In a separate bowl, combine flour, salt, cocoa powder, baking soda, and baking powder. Slowly add the flour mixture to the sugar mixture while stirring until fully combined.
  • Spoon dough onto greased baking sheet in rounded tablespoonfuls, ensuring a 3-inch space between each; dough will spread while baking.
  • Place in a preheated oven for 6 to 8 minutes or until firm to the touch. Let cool for at least an hour before filling.
  • Prepare the Marshmallow Filling: Combine 1/2 cup of butter or margarine, confectioners' sugar, flavored extract, and marshmallow creme in a medium bowl. Mix until smooth. Spread 1 to 2 tablespoonfuls of filling on one cookie crust and sandwich it with another cookie crust.
