Delicious pecan oatmeal Danish cookies - buttery and light.
Ingredients:
  • 1 cup all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1 cup confectioners' sugar
  • 1 cup oatmeal
  • 1 cup chopped pecans
  • 1 tablespoon confectioners' sugar, or as needed
Instructions:
  • Preheat oven to 325 degrees F (165 degrees C) and line a baking sheet with parchment paper.
  • Combine the flour, baking soda, and salt in a bowl. In another large bowl, blend the butter, 1 cup of confectioners' sugar, and vanilla until smooth and creamy. Fold in the flour mixture, then gently add the oatmeal and pecans until just combined.
  • Using a spoon, scoop about 1 scant tablespoon of dough per cookie onto the lined baking sheet. Bake in the preheated oven until lightly golden, for approximately 20 minutes. Allow the cookies to cool completely before dusting with confectioners' sugar.
