Danish Red Cabbage

Festive Danish cabbage side dish, perfect for the holidays.
Ingredients:
  • 1 (2 pound) red cabbage
  • 2 tablespoons butter
  • 0.25 cup distilled white vinegar
  • 1 cup cranberry juice
  • 2 tablespoons sugar, or more to taste
  • salt to taste
Instructions:
  • Peel off the outer leaves of the cabbage and discard. Cut the cabbage into quarters, then remove and discard the tough white core. Finely chop the remaining cabbage.
  • In a pot over medium heat, melt butter until sizzling. Stir in cabbage until slightly softened, about 2-3 minutes. Add vinegar, then mix in cranberry juice and sugar. Season with salt to taste.
  • Simmer the cabbage covered on low heat for 60 to 75 minutes until completely tender, stirring occasionally. Sweeten with more sugar if needed towards the end.
