Decadent chocolate-cinnamon custard-style ice cream.
Ingredients:
  • 2.5 cups heavy whipping cream
  • 0.5 cup milk
  • 0.75 cup white sugar
  • 2 tablespoons unsweetened dark cocoa powder
  • 1 ounce high-quality dark chocolate (85%), finely chopped
  • 5 egg yolks
  • 1.5 teaspoons ground cinnamon, plus more for dusting
Instructions:
  • Combine cream, milk, sugar, and cocoa powder in a saucepan over medium heat, whisking until smooth and sugar dissolves. Just before simmering, add dark chocolate and stir until melted. Slowly whisk in egg yolks and cook until slightly thickened, about 1 to 2 minutes. Transfer mixture to a container, cover, and refrigerate for at least 6 hours until chilled.
  • Fold aromatic cinnamon into the cool custard mixture, then churn in an ice cream maker according to the manufacturer's directions. Before serving, dust the scoops of frozen custard with an extra sprinkle of cinnamon.
