Savor the sweetness of dates in this irresistible snack.
Ingredients:
  • 160g date
  • 82.50 ml glacé ginger
  • 130.00 gm peanut butter
  • 178.75 gm honey
  • 3.75 gm ground ginger
  • 1.25 gm mixed spice
  • 1.25 gm ground cinnamon
  • 200.00 gm rolled oats
  • 115.00 gm walnuts, chopped
  • 62.50 ml pepitas
Instructions:
  • Grease a 20cm x 30cm lamington pan and line it with baking paper, leaving a 2cm overhang on all sides.
  • Pulse dates and glacé ginger in a food processor until finely chopped and mixture comes together in a ball. Transfer to a bowl.
  • In a saucepan over medium-low heat, combine peanut butter, honey, ginger, mixed spice, and cinnamon. Stir and cook for 3 minutes until smooth. Add the date mixture and combine. Transfer to a heatproof bowl. Add oats, walnuts, and pepitas. Mix well, then press into the prepared pan. Refrigerate for 4 hours until firm. Cut into bars and serve.
