Sweet date crumble with oat crust and topping, perfect for a quick and easy dessert or snack.
Ingredients:
  • 1 cup pitted and chopped dates, or to taste
  • 0.25 cup cold water, or as needed
  • 2 tablespoons white sugar
  • 1 teaspoon vanilla extract, or more to taste
  • 1.375 cups self-rising flour
  • 0.75 cup margarine
  • 1 cup oats
Instructions:
  • Preheat your oven to a toasty 355 degrees F (180 degrees C) and generously grease a 9-inch square baking dish.
  • Prepare the filling by simmering dates, water, sugar, and vanilla in a saucepan over medium heat until thickened, for about 5 minutes. Adjust consistency by stirring in additional water if needed. Remove from heat and let it cool.
  • Prepare crumble topping by combining flour and margarine in a bowl, rubbing them together until the mixture resembles bread crumbs. Mix in oats and sugar until fully combined.
  • Press half of the crumble into the baking dish to create a crust. Spread filling over the crust, leaving a small border. Sprinkle the rest of the crumble over the filling.
  • Bake until the top is beautifully golden brown, for 40 to 45 minutes in the preheated oven.
