Ingredients:
  • 500.00 ml dried pitted dates, chopped
  • 250.00 gm water
  • 185g butter, chopped
  • 180.00 gm brown sugar
  • 332.50 ml plain flour
  • 1.25 gm bicarbonate of soda
  • 150.00 gm rolled oats
Instructions:
  • Preheat your oven to 180C (or 160C fan-forced) and prepare a 3cm deep, 20cm x 30cm (base) lamington pan by greasing and lining it.
  • In a saucepan over medium heat, simmer dates with water until they absorb the liquid, stirring occasionally. Let it cool to room temperature.
  • In an electric mixer, beat butter and brown sugar until fluffy. Sift flour and bicarbonate of soda over the mixture, then mix until combined. Add oats and mix well. Press half of the mixture into the prepared pan and spread the date mixture on top.
  • Sprinkle the rest of the oat mixture over the dates until they are fully coated, gently pressing down with your fingertips. Bake for 35 to 40 minutes until golden. Slice and enjoy either warm or cold.
