Whip up a simple and delicious Date and Carrot loaf with just a few steps!
Ingredients:
  • 100g butter, chopped
  • 180.00 gm brown sugar
  • 250.00 ml chopped pitted dates
  • 2.50 gm mixed spice
  • 2.50 gm bicarbonate of soda
  • 2 eggs, lightly beaten
  • 225.00 gm self-raising flour, sifted
  • 150g packet mixed nuts
  • 125.00 ml grated carrot
  • Icing sugar mixture, for dusting
Instructions:
  • Preheat your oven to 180C/160C fan-forced. Grease a 6cm-deep, 10cm x 20cm loaf pan and line it with baking paper, letting it overhang by 2cm on the long sides.
  • In a saucepan over medium heat, combine butter, sugar, dates, spice, and 1 cup of cold water. Stir and cook for 4 minutes until the butter melts and sugar dissolves. Bring to a boil, then remove from heat. Stir in bicarbonate of soda and let it cool for 20 minutes before using.
  • Combine the eggs with the flour, nuts, and carrot until well mixed. Pour the batter into a prepared pan and bake for 50 minutes or until a skewer inserted in the center comes out clean. Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Dust with icing sugar, then serve.
