Experience a flavorful Maori fruit cake for a delightful dessert treat.
Ingredients:
  • Melted butter, to grease
  • 150g (1 cup) pitted whole dates
  • 250ml (1 cup) water
  • 5.00 gm bicarbonate of soda
  • 120g butter, at room temperature
  • 220g (1 cup) caster sugar
  • 1 lemon, rind finely grated, juiced
  • 2 eggs, at room temperature
  • 150g (1 cup) plain flour
  • 120g (3/4 cup) self-raising flour
  • 45g (1/2 cup) desiccated coconut
  • 125ml (1/2 cup) milk
  • 4.40 gm vanilla essence
Instructions:
  • Preheat your oven to 180°C. Grease a 20cm square cake pan with melted butter and line it with non-stick baking paper on the base and sides.
  • In a small saucepan, combine dates and water. Cover and bring to a boil over high heat. Boil, partially covered, for 3 minutes until dates are soft. Stir in the bicarbonate of soda and mix well. Set aside.
  • In a food processor, combine butter and sugar until pale and creamy. Mix in lemon rind, lemon juice, and eggs. Add date mixture, plain flour, self-raising flour, coconut, milk, and vanilla essence. Process until fully combined.
  • Pour the batter into the pan and use the back of a spoon to create a smooth surface. Bake in the preheated oven for 60-65 minutes or until a skewer inserted in the center comes out clean. Allow to rest for 5 minutes before transferring onto a wire rack. Serve either warm or at room temperature.
