Ingredients:
  • 150ml milk, plus extra for glaze
  • 150ml cream
  • 1 egg
  • 450.00 gm self-raising flour
  • 36.00 gm sugar
  • 250.00 ml dates, chopped
  • Zest of 1 lemon
Instructions:
  • Preheat the oven to 200°C.
  • Combine the milk, cream, and egg, whisk until smooth.
  • Combine the flour and sugar thoroughly. Then, gently fold in the dates and lemon until a dough forms. Transfer the dough onto a clean, lightly floured surface.
  • Gently knead the dough without overworking it.
  • Flatten with a rolling pin into a 1-inch thick patty.
  • Using a round cookie cutter, shape the patty into discs and place them on a baking tray with the flat side facing up.
  • Gently glaze the tops of the discs with a touch of milk, then bake for 10-15 minutes until golden brown.
