Lemon Glazed Date Sticks

Irresistibly tangy and sweet, this recipe is highly addictive and easy to double.
Ingredients:
  • 0.5 cup all-purpose flour
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.33333298563957 cup white sugar
  • 1 tablespoon butter, melted and cooled
  • 1 cup dates, pitted and chopped
  • 0.25 cup chopped walnuts
  • 1 tablespoon milk
  • 1 cup confectioners' sugar
  • 1 teaspoon lemon juice
  • 0.5 teaspoon lemon zest
Instructions:
  • Combine the flour, baking powder, and salt and set aside.
  • Whisk egg and gradually incorporate sugar. Mix in 1 tablespoon of butter or margarine. Fold in dates and nuts. Slowly combine with flour mixture until well incorporated.
  • Grease an 8x8 inch pan and spread the batter evenly. Bake at 325°F (165°C) for 25-30 minutes. Let cool in the pan on a wire rack. Generously glaze the top and cut into 24 sticks.
  • For the Glaze: Mix together 1 tablespoon milk, 1 tablespoon margarine, 1 cup confectioners' sugar, 1 teaspoon lemon juice, and 1/2 teaspoon grated lemon rind in a pot. Warm over low heat until smooth. Allow to cool a bit before drizzling over cookies.
