Delicious flaky date-filled cookies that can be easily customized with raisins or mincemeat.
Ingredients:
  • 1 cup dates, pitted and chopped
  • 0.5 cup white sugar
  • 0.5 cup water
  • 0.5 cup butter, softened
  • 0.5 cup packed brown sugar
  • 1.5 cups all-purpose flour
  • 0.5 teaspoon salt
  • 0.25 teaspoon baking soda
  • 1.25 cups rolled oats
  • 2 tablespoons water, or more as needed
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • Combine dates, sugar, and 1/2 cup water in a small saucepan over low heat. Simmer until thick and smooth, for approximately 15 minutes. Allow to cool.
  • Combine butter and brown sugar until creamy. Slowly incorporate flour, salt, and baking soda. Mix in oatmeal until well combined. Add 2 to 4 tablespoons water as necessary to form the dough. Shape the dough into a ball and chill in the fridge for 15 minutes.
  • Roll out dough on a floured surface until it's 1/8 inch thick, then cut into 2-inch rounds. Place half of the rounds on cookie sheets. Spoon date mixture onto the center of each round and cover with another round. Press edges together firmly.
  • Bake until golden brown in the preheated oven for about 15 minutes.
