Decadent Chocolate Orange Cake

Decadent layers of moist orange cake with rich dark chocolate ganache and tangy orange cream cheese filling.
Ingredients:
  • 2 orange peels, cut into 1/4 inch strips
  • 0.33333334326744 cup white sugar
  • 0.25 cup orange marmalade
  • 0.75 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 4 eggs
  • 2.5 cups cake flour
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon baking soda
  • 0.75 cup orange juice
  • 1.25 cups heavy cream
  • 4 tablespoons unsalted butter
  • 15 ounces semisweet chocolate chips
  • 1 (8 ounce) package cream cheese, softened
  • 1 tablespoon white sugar
  • 2 tablespoons orange marmalade
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C). Grease two 8-inch round cake pans with cooking spray and line the bottoms with parchment paper.
  • Peel oranges with a vegetable peeler in strips. Coarsely chop zest in a food processor, pausing to scrape down the sides. Blend with 1/3 cup sugar until minced. Add 1/4 cup marmalade and pulse until smooth. Transfer to a large bowl and stir in 3/4 cup unsalted butter and 1 teaspoon vanilla.
  • Using an electric mixer, cream the mixture until it becomes light and fluffy. Then, beat in 1 cup of sugar. Add eggs one at a time, making sure to beat well after each addition. In a small bowl, sift together flour, baking powder, and baking soda. Beat in the flour mixture alternately with the orange juice, mixing just until everything is incorporated. Finally, divide the batter into the prepared pans.
  • Place the dish in the oven already preheated for 35 minutes, or until a toothpick poked into the cake's center comes out clean. Allow it to cool in the pan for 10 minutes, then flip it onto a wire rack to cool entirely.
  • In a heavy large saucepan, gently heat cream and butter until simmering. Remove from heat, add chocolate chips, and stir until smooth.
  • In a small bowl, whip cream cheese with 1 tablespoon of sugar and 2 tablespoons of marmalade until smooth and well combined.
  • For cake assembly: Slice each cake into 2 layers. Place one layer on a plate, spread filling. Drizzle hot ganache over bottom layer, let it cool briefly. Add second cake layer, spread more filling. Drizzle hot ganache over top. Repeat with third layer. Finish with fourth cake layer. Pour ganache all over the cake for a glossy look. Chill cake uncovered until ganache sets.
