Banana bread gets extra moist and flavorful with Greek yogurt, ripe bananas, chocolate chips, and walnuts.
Ingredients:
  • 2 cups mashed bananas
  • 0.5 cup plain Greek yogurt
  • 0.75 cup butter
  • 0.66666668653488 cup white sugar
  • 0.66666668653488 cup brown sugar
  • 2 eggs, beaten
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup oat flour
  • 1 cup rolled oats
  • 2 teaspoons baking soda
  • 1.5 teaspoons baking powder
  • 1 cup chocolate chips
  • 1 cup chopped walnuts
Instructions:
  • Preheat the oven to a perfect 350 degrees Fahrenheit (175 degrees Celsius) and generously grease two 9x5-inch loaf pans.
  • Combine the mashed bananas and yogurt in a bowl.
  • In a large bowl, cream together butter, white sugar, and brown sugar using an electric mixer until creamy. Mix in eggs and vanilla extract until combined. Stir in banana mixture until well blended.
  • Combine flour, oat flour, rolled oats, baking soda, baking powder, and salt in a bowl. Gently mix into the banana-butter mixture until just combined. Be careful not to overmix. Gently fold in chocolate chips and walnuts. Distribute batter evenly between the pans.
  • Once the oven has been preheated, bake for 50 to 60 minutes or until a knife inserted into the center comes out clean. After baking, cover with aluminum foil for 5 minutes, then remove from the pans and allow to cool completely.
