Banana, Greek yogurt, pumpkin, dark chocolate, and walnuts make a delicious and simple Bundt cake.
Ingredients:
  • 3 cups whole wheat flour
  • 2 teaspoons ground cinnamon
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon ground ginger
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon ground cloves
  • 0.25 teaspoon ground allspice
  • 1.25 cups mashed overripe bananas
  • 1 cup pumpkin puree
  • 1 cup whole-milk plain Greek yogurt
  • 0.5 cup pure maple syrup
  • 3 eggs, at room temperature
  • 1.5 teaspoons vanilla extract
  • 0.75 cup dark chocolate chips
  • 0.75 cup chopped walnuts
Instructions:
  • Preheat the oven to 350°F (175°C) and generously grease a 10-inch fluted tube pan, like a Bundt pan.
  • In a medium bowl, combine and mix flour, cinnamon, baking powder, baking soda, ginger, salt, nutmeg, cloves, and allspice until well blended.
  • In a large bowl, combine bananas, pumpkin, yogurt, maple syrup, eggs, and vanilla extract until smooth. Gradually mix in half of the dry ingredients until just combined, then add the rest and mix again. Gently fold in chocolate chips and walnuts before pouring the batter into the prepared pan.
  • Bake in the preheated oven for 50 to 55 minutes or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 to 15 minutes, then gently loosen the edges with a knife, invert onto a wire rack, and cool completely.
