Wholesome pumpkin-banana-oat muffins with warm spices and Greek yogurt - perfect for on-the-go snacking!
Ingredients:
  • 1 cup all-purpose flour
  • 1 cup oat flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon ground nutmeg
  • 0.5 teaspoon ground cloves
  • 1 stick butter, softened
  • 0.25 cup white sugar
  • 0.5 cup vanilla Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 cup pumpkin puree
  • 0.75 cup mashed ripe bananas
  • 0.5 cup semisweet chocolate chips
  • 0.5 cup chopped toasted pecans
  • 1 cup vanilla-coconut granola
  • 0.75 cup semisweet chocolate chips
Instructions:
  • Preheat the oven to 350°F (175°C) for perfect baking temperature.
  • In a mixing bowl, blend together flour, oat flour, baking soda, baking powder, salt, cinnamon, ginger, nutmeg, and cloves until well combined.
  • In a separate bowl, blend together butter, brown sugar, and white sugar until smooth using an electric mixer. Mix in eggs, yogurt, and vanilla extract on medium speed. Fold in pumpkin purée, mashed bananas, chocolate chips, and pecans. Gently stir in the flour mixture until just combined.
  • Mix together the granola, chocolate chips, and pecans in a bowl, and set the delicious topping aside.
  • Fill the prepared muffin cups 2/3 full with batter and sprinkle topping over them.
  • Bake in the oven until a toothpick inserted in the center comes out clean, about 25-30 minutes.
