Delicious and easy pumpkin banana pancakes for a family-friendly breakfast.
Ingredients:
  • 0.5 cup all-purpose flour
  • 0.5 cup whole wheat flour
  • 2 tablespoons white sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground cinnamon
  • 0.75 cup milk
  • 0.25 cup pumpkin puree
  • 1 mashed banana
  • 2 tablespoons vegetable oil
  • 1 large egg
Instructions:
  • Combine all-purpose flour, whole wheat flour, sugar, baking powder, salt, and cinnamon in a bowl, sifting them together. Reserve for later use.
  • Combine the milk, pumpkin, banana, oil, and egg in a separate bowl, then mix in the flour mixture until just moistened.
  • Preheat a lightly oiled griddle over medium heat. Spoon batter onto the griddle and cook until bubbles form and edges are dry, about 3-4 minutes. Flip and cook until browned on the other side, about 2-3 minutes. Repeat with the rest of the batter.
