Vegan pumpkin pancakes with a hint of pumpkin flavor, topped with nuts, bananas, and syrup.
Ingredients:
  • 1.25 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon pumpkin pie spice
  • 1 cup soy milk
  • 1 tablespoon brown sugar
  • 3 tablespoons pumpkin puree
  • 1.5 teaspoons vegetable oil
  • 0.33333334326744 cup water
Instructions:
  • In a bowl, mix together flour, baking powder, pumpkin pie spice, and salt.
  • Combine the milk, brown sugar, pumpkin puree, vanilla extract, oil, and water in a separate bowl; mix well. Create a hole in the flour mixture, pour in the milk mixture, and stir until fully mixed.
  • Preheat a nonstick skillet over medium-high heat. Pour 1/4 cup pancake batter onto the skillet and cook until bubbles appear and edges set, about 3 to 5 minutes. Flip and cook until golden brown, another 3 to 5 minutes. Repeat with the rest of the batter.
