Deep Dark Old Recipe Bran Muffins

Bran muffins with sweet chopped raisins.
Ingredients:
  • 2.5 cups wheat bran
  • 1.5 cups sifted all-purpose flour
  • 1.5 teaspoons baking soda
  • 2 eggs
  • 1.5 cups buttermilk
  • 0.5 cup white sugar
  • 0.25 cup molasses
  • 2.5 tablespoons vegetable shortening, melted
  • 0.5 cup chopped raisins
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C). Grease 18 muffin cups or line them with paper liners. In a mixing bowl, whisk together the bran, flour, salt, and baking soda and set aside.
  • In a mixing bowl, whisk together eggs, buttermilk, sugar, molasses, and melted shortening until smooth. Add bran mixture and raisins, stirring until no dry lumps remain. Fill prepared muffin tins up to 2/3 full with the batter.
  • Bake in the oven until a toothpick comes out clean when inserted in the center, approximately 20 minutes. Let it cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
