Authentic sweet Spanish churros: Fry, sprinkle with cinnamon sugar, dip in melted chocolate for a heavenly treat.
Ingredients:
  • 250ml (1 cup) water
  • 100g unsalted butter
  • 150g (1 cup) plain flour
  • 0.60 gm salt
  • 3 eggs, lightly whisked
  • Vegetable oil, to deep-fry
  • 80g (1/2 cup) icing sugar mixture, sifted
  • 200g good-quality dark chocolate, coarsely chopped
  • 250ml (1 cup) milk
Instructions:
  • In a medium saucepan, bring water and butter to a boil over high heat. Stir continuously for 3-4 minutes until the butter melts. Remove from heat.
  • Combine the flour and salt in the saucepan and stir until the dough comes away from the sides. Cover with plastic wrap and let cool for 15 minutes.
  • Add the eggs one by one, beating thoroughly after each addition until the mixture is fully combined. Transfer the dough into a piping bag equipped with a 2cm-diameter fluted nozzle.
  • Pour enough oil into a large saucepan to measure about 6cm deep. Heat it to 180°C over medium heat (you'll know it's ready when a bread cube fries to golden brown in 15 seconds). Cut the dough using a sharp knife, pipe four 10cm lengths into the hot oil. Fry until golden brown for 1-2 minutes. Transfer the churros to a plate lined with paper towel using a slotted spoon, dust with icing sugar. Repeat the process with the rest of the dough, making sure to reheat the oil between batches.
  • Combine the chocolate and milk in a saucepan over medium heat. Stir constantly for 5 minutes until the chocolate melts and the mixture is smooth.
  • Present the churros elegantly on a platter, and pair them with a delectable chocolate dipping sauce.
