Juicy, flavorful prime rib roast with a crispy crust, served with rich au jus.
Ingredients:
  • 1 (10 pound) prime rib loin roast
  • 2 cups concentrated beef base (paste)
  • 0.5 cup chopped fresh thyme
  • 0.5 cup dried oregano
  • 0.5 cup whole black peppercorns
  • 2 teaspoons salt
  • 2.5 cups water
  • 1 tablespoon concentrated beef base (paste)
  • 2 tablespoons dry red wine
  • 1 teaspoon finely chopped fresh thyme
  • 1 teaspoon dried oregano
  • 0.5 teaspoon garlic powder
  • 0.5 medium white onion, coarsely chopped
  • 0.5 medium carrot, peeled and coarsely chopped
  • 1 stalk celery, quartered
Instructions:
  • Preheat your oven to 350°F (175°C) and trim any large pieces of tough fat from the roast while keeping smaller bits of fat intact.
  • Combine beef base and garlic in one bowl, and mix thyme, oregano, peppercorns, and salt in another bowl. Rub the beef base mixture generously all over the roast, then sprinkle with the herb mixture before placing the roast into a roasting pan.
  • Roast in the preheated oven until the meat forms a flavorful brown crust, approximately 3 hours. After roasting, use an instant-read thermometer to check for medium-rare doneness at 130°F (54°C) in the thickest part of the roast. Let the roast rest after removing it from the oven as the temperature increases by 5 to 10 degrees F.
  • Prepare the sauce by combining water and beef base in a saucepan over medium-low heat, whisking until base dissolves. Stir in red wine, thyme, oregano, and garlic powder, then add onion, carrot, and celery. Bring to a boil, then simmer and stir occasionally until the sauce reduces by half, about 20 to 30 minutes. Strain the sauce, discard the vegetables, and serve with your roast.
