Delicata squash gratin: Baked in cheese sauce, easy and perfect for fall/winter.
Ingredients:
  • 2 delicata squash
  • salt and ground black pepper to taste
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1.5 cups milk
  • 1 cup shredded Gruyere cheese
  • 1 pinch cayenne pepper
Instructions:
  • Preheat the oven to 350°F (175°C) and generously coat a medium casserole dish with cooking spray.
  • Prepare the delicata squash by slicing it lengthwise, removing seeds and pulp, and cutting it into 1/2-inch crescent-shaped slices. Place the squash in the pan and season lightly with salt and pepper.
  • In a 1-quart saucepan, gently melt butter over medium heat. Add flour and stir constantly for 2 minutes, ensuring it doesn't brown. Slowly pour in the milk and bring to a boil. Cook and stir for about 3 minutes; remove from heat. Stir in Gruyere cheese until melted. Season with cayenne pepper, salt, and pepper to taste.
  • Drizzle the cheese sauce over the squash and bake in the oven until the squash is tender when pierced with a fork, typically 25 to 30 minutes. Finish by sprinkling with fresh parsley.
