Elevate baked Delicata squash with a flavorful blend of onions, sage, and mixed nuts for a delicious and satisfying side.
Ingredients:
  • 1.5 tablespoons butter
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1.5 teaspoons dried sage
  • 2.5 tablespoons chopped walnuts
  • 2.5 tablespoons chopped pistachios
  • 2.5 tablespoons chopped almonds
  • 2.5 tablespoons pine nuts
  • 0.33333334326744 cup grated Parmesan cheese, plus extra for topping
  • 2.5 tablespoons low-fat plain yogurt
  • 1 large egg, lightly beaten
  • 2 small delicata squash, halved lengthwise and seeded
Instructions:
  • Preheat the oven to 350°F (175°C) to create the perfect cooking environment.
  • In a large skillet over medium-high heat, melt the butter until sizzling. Add the onion, garlic, and salt, and cook until the onion is soft, about 3 minutes. Mix in the sage and cook until aromatic, about 1 minute. Add the walnuts, pistachios, almonds, and pine nuts. Take off the heat and enjoy the nutty aroma!
  • In a large bowl, mix together 1/3 cup Parmesan cheese, yogurt, and egg. Stir in the nut mixture. Divide the stuffing among the squash halves and sprinkle with extra Parmesan cheese.
  • Roast in the oven until the squash is fork-tender and the stuffing begins to brown, approximately 45 minutes. Serve by cutting each squash half into quarters.
