Grilled delicata squash with smoky butter and warm cranberry dressing: holiday perfection.
Ingredients:
  • 1 large delicata squash
  • 1 tablespoon olive oil
  • salt and freshly ground black pepper to taste
  • 1 tablespoon minced shallot
  • 0.25 teaspoon dried thyme
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons honey
  • 2 tablespoons dried cranberries, coarsley chopped
Instructions:
  • Get the outdoor grill ready by preheating it to medium-high heat and giving the grate a light coating of oil.
  • Thoroughly clean the delicata squash by scrubbing it. Remove the ends and discard. Scoop out the seeds using a spoon or knife. Cut the squash into 3/4-inch slices. Place the slices in a resealable bag with 1 tablespoon of olive oil, salt, and pepper. Set aside.
  • In a small saucepan, warm 1 tablespoon of olive oil over medium-low heat. Cook shallot until golden and translucent, about 2 to 3 minutes. Stir in thyme, balsamic vinegar, and honey until blended. Add cranberries and bring to a boil. Lower heat and simmer until dressing thickens slightly, about 2 to 3 minutes. Remove from heat, set aside, and keep warm.
  • Grill the squash slices with the lid closed until they are delicately charred and tender, approximately 5 minutes per side. Transfer the grilled squash to a platter and drizzle with the warm dressing.
