Grill delicate flounder effortlessly on a nonstick mat. Cook briefly on one side, saving time for other dishes.
Ingredients:
  • 1 pound flounder filet, without skin, about 3/4” at thickest part
  • 1 1/2 Tablespoons buttermilk
  • 1 teaspoon Lower Sodium Old Bay seasoning
  • 1/4 teaspoon smoked paprika
  • Olive oil cooking spray
  • Lemon slices for garnish (optional)
  • Flat-leaf parsley for garnish (optional)
Instructions:
  • Clean the grates on your outdoor grill thoroughly. Preheat the grill to 400 degrees F (200 degrees C) and lightly coat the grates with oil.
  • Get the fish ready while the grill heats up. Gently dry the filets with paper towels and coat them with buttermilk. Season both sides with Old Bay and smoked paprika, then give them a quick spray of olive oil.
  • Once the grill is hot, lay the grilling mat down and place the filets on top. Grill until the fish edges start to turn opaque white, about 3 to 4 minutes. For thicker filets over 3/4-inch at the thickest part, consider extending the grilling time as needed.
  • Carefully transfer the grilled fish from the mat to a slightly larger cutting board. Cover the fish with a serving plate, then flip the fish onto the plate, ensuring the grilled side is facing up. Allow the fish to rest for 2 to 3 minutes to finish cooking.
  • Top off with refreshing lemon slices and fragrant flat-leaf parsley, if desired.
